Hearty Irish Stew
2 lbs. Lamb chops
4 tbls. Butter
1 cup Water
2 cups Chicken broth
2 cloves of Garlic, chopped
2 tbls. fresh Parsley
1/4 tsp. Thyme
Salt and Pepper to taste
4 med. Potatoes
2 large Onions, chopped
1/2 lbs. baby Carrots
3 Celery stalks, chopped
16 oz pkg. frozen Peas
1/2 cup milk mixed with 1 tbls. of flour (opt.)
In a Dutch oven, brown lamb chops in butter. Add water, chicken broth, garlic and seasonings. Bring to a boil, cover and simmer for 1 hour. Add potatoes, onions, carrots and celery. Simmer for 20 minutes. Add peas and cook for another 10 minutes. Thicken with milk/flour mixture, if desired. Seves 8.
