Easy Meals with Pita Bread

Whether it's dinnertime, lunchtime or snacktime all you need is a package of pita bread to get started.
Follow these ideas and tips to make easy meals with pita bread.

Pita Bread Pizza
This is a great way to use leftovers to make a pita bread pizza creation. Here are a few variations but be sure to try your own concoction too!

Italian: pizza sauce, mozzarella cheese, parmesan cheese, pepperoni, olives, onions, or mushrooms, oregano, basil, garlic powder.
Mexican: salsa, monterey jack cheese, jalapenos, chopped tomato, beans, or refried beans, cumin, chili powder.
BBQ: barbeque sauce, cooked chopped chicken, onions, gouda cheese.
Veggie: hummus, assorted chopped vegetables, choice of cheese, fresh herbs.
Mediterranean: pesto sauce, spinach, black olives, feta cheese, fresh basil.

Bake pizzas on oven rack at 375 degrees until cheeses are melted and pita is crispy.

Pita Sandwiches
Slice a pita bread in half and you'll find a nice holder for just about any kind of filling.
Here are a few of my favorites:

Tuna Salad Supreme: flaked tuna, mayonnaise, chopped celery, chopped tomato, fresh spinach leaves.
Chicken Salad Supreme: lettuce, chopped cooked chicken, mayonnaise, sliced seedless grapes, dried tarragon.
Veggie Explosion: chopped marinated artichokes, mushrooms, roasted peppers, mozzarella cheese. Heat until cheese is melted.
Pita Salad: Fill pita bread with any type of salad mixture. Drizzle with salad dressing.
Pita Steak: Chop leftover steak or chicken to fill pita. Top with shredded cheese, lettuce and tomato. heat until cheese is melted.

Breakfast Pitas:
Fill pitas with your choice of scrambled eggs, crumbled bacon or sausage, cheese and veggies.

Dessert Pitas:
Brush pita bread with butter. Sprinkle with cinnamon and sugar. Bake at 375 degrees until pita is crispy. Top with pie filling or fresh fruit if desired.
